Fitness Friday #12- A Healthy Pumpkin Recipe

Technically, it's early Saturday morning or late Friday night, but I wanted to get this Fitness Friday recipe out in time for the upcoming Thanksgiving holiday in case you're looking for a healthy contribution to any feasts you might be attending with family or friends. This low-fat pumpkin dip is served with fresh apple slices for an appetizer and/or dessert that is tasty, healthy, and completely reminiscent of fall. Here is my altered version of this recipe.

Healthy Pumpkin Dip

Healthy Pumpkin Dip with Spiced Apples

3/4 cup (6 ounces) 1/3-less-fat cream cheese
1/2 cup packed brown sugar
1/2 cup canned pumpkin
2 teaspoons maple syrup
1/2 teaspoon ground cinnamon
2-3 large apples (I prefer Honeycrisp)
3 tbs lemon juice
1/8 cup lite whipped topping


★ Place cream cheese, brown sugar, and pumpkin in a mixing bowl, and beat with a mixer at medium speed until well blended. Add syrup and cinnamon, and beat until smooth.
★ Garnish with whipped topping and a sprinkle of cinnamon (an little dash of nutmeg is nice too if you choose).
★ Cover and chill 30 minutes.
★ Core and slice apples. Drizzle with lemon juice to keep slices fresh (this won't affect the flavor of the apples). Sprinkle a layer of cinnamon onto the apple slices.
★ Arrange on a pretty dish and you're good to go!

  9. thats yummy looking! i love just about anything pumpkin :) this recipe could have been for pumpkin flavored cardboard and I'd say "awesome! bring some to the next craft show!" lol
