Low Fat Lemon Cookies
1 box lemon cake mix
1 small (8 oz) container lite whipped topping
6 tablespoons egg whites
1/2 cup powdered sugar
★ Pour the box of cake mix into the bowl. Mix to create a thick, sticky batter.
★ Since the batter is so tacky, refrigerate for an hour or so before attempting to form your cookies.
★ Once cooled, drop a spoonful of the batter into a bowl of powdered sugar. Roll to coat. Continue until all the batter is gone, and use any remaining sugar to dust the tops of the cookies.
★ Place cookies on lightly greased baking sheets and bake at 350° for 10-14 minutes.
★ Check at 10 minutes and every two minutes after. Remove cookies when they are a light golden brown around the edges.
★ These will firm up a little as they cool, but they are meant to be a light, fluffy cookie.

I should add that this recipe yields 3 dozen cookies. The fact that there are only 6 left for this photograph should serve as a testament for both how delicious they are as well as how little self-control my husband and I have when there are sweets in the house.
